This Sheet Pan BBQ Meatloaf Dinner is a one-pan, complete meal. Individual BBQ meatloaves are baked along side green beans and potatoes for a meal that quickly became a favorite in our house!

The past few weeks have been a whirlwind. A good whirlwind, but incredibly busy leaving me feeling slightly exhausted. What have I been doing?

  • Virtual schooling and getting ready for the kids to return two days a week just a few more days until they board the bus! Miss. Hazelnut hasnt been in a school in a year. And Mr. Nutterbutter will be finally stepping foot in his new school and riding the bus for the first time!
  • Blogging. Lots of blogging. Ive managed to get 6 new recipes made and blogged in the past two weeks. Weve run the dishwasher a lot, and I only spilled one cocktail while attempting to photograph it.
  • I got vaccinated! I showed up expecting the Pfizer vaccine only to get the new Johnson & Johnson one. It was so new that I didnt know what to expect in terms of side effects so I was a bit apprehensive, but it worked out. I ended up with a tender arm for a few days, some serious chills , and some tiredness. But given what Ive heard from others, I cant complain. AND IM VACCINATED!!!

Why This Recipe Works

We eat a lot of salmon in my house and grilling salmon on cedar planks is one of my favorite ways to cook it. The cedar planks impart a distinctive woodsy flavor that compliments the richness of the salmon.

And to top if off I use a honey bourbon sauce to marinate the fish and also as a glaze to coat the fish as it cooks. It’s a delicious, restaurant quality meal right in your own backyard!

One last note. Roasting time varies on many factors, including the size and shape of your food, the temperament of your oven, or even the material and color of your baking sheet. So, take my roasting time with a grain of salt.

If your vegetables are done before your meatloaves, take them out early and return the loaves to the oven until they finish. If the vegetables need more time and your meatloaves are done, plate up the meatloaf and return the vegetables to the oven. Use your senses and watch for doneness. And please use a thermometer to make sure your meatloaves are cooked to a safe temperature, 160ºF.

Can I Half Or Double This Recipe

As written, this meatloaf makes 8 servings.

If you want to half the recipe, youll need to reduce your cook time by several minutes. However, I think this meatloaf tastes even better the next day. So even if youre not feeding a crowd, I recommend you just cook once and eat twice.

As far as doubling goes, if you choose to double this recipe, youll need to increase the cooking time by several minutes to account for the thicker meatloaf.

How Many Does This Recipe Feed

This recipe makes dinner for two, and if you know me and my style of eating, then you know that I like things heavy on vegetables and light on the meat. This meal is super easy to switch up if you want different portions, though. To avoid overcrowding the sheet pan, use two sheet pans to double this dinner and feed four. Or double the meat mixture and keep the vegetables the same to do four portions that are heavier on the meat and lighter on the vegetables. Its up to you.

How To Make Sheet Pan Bbq Meatloaf Dinner Step By Step Photos

Begin by preheating the oven to 400ºF. Peel and dice one sweet potato into 1/2 to 3/4-inch cubes. Place the cubes on a baking sheet along with 12 oz. frozen broccoli florets . Drizzle a tablespoon of olive oil over each, then season the sweet potatoes with your favorite seasoning salt and the broccoli with a pinch of salt and pepper. Use your hands to toss the vegetables until they are coated in oil and spices. Pop the baking sheet in the oven and roast for 15 minutes.

While the vegetables are roasting, prepare the meatloaf. Combine 1/2 lb. ground beef with 1 large egg, 2 Tbsp bread crumbs, 1 Tbsp BBQ sauce, 1/4 tsp smoked paprika, 1/4 tsp salt, and 1/8 tsp garlic powder.

Mix the meatloaf ingredients together until evenly combined. Divide the mixture in half and then shape each half into a flattened oval. Just make sure they are the same thickness all the way through so they cook evenly.

After the vegetables have roasted for 15 minutes, take the baking sheet out of the oven, stir the vegetables, and push them to each side a bit to make room for the meatloaves. Place the meatloaves in the center and spread about 1 Tbsp BBQ sauce over top of each.

And this is what it looks like when finished. The sweet potatoes should be soft and with some browning on the edges. The broccoli should also have some browning on the very edges.

How To Make Bourbon Sauce For Salmon

This bourbon sauce is similar to the bourbon salmon marinade at Longhorn steakhouse, but for even more flavor I reduce half of the sauce to make a glaze for basting the salmon as it cooks. To make the sauce:

  • Combine all of the bourbon sauce ingredients in a bowl and stir to combine.
  • Place the salmon filets in a large resealable bag and pour half of the sauce over top, then toss to coat and refrigerate. Let marinate for at least 30 minutes, turning occasionally. Reserve the remaining sauce for later.

    How To Fit Your Meatloaf In Your Cooking Pot

    Its important to shape the meatloaf so that it will fit in your pressure cooking pot. My meatloaf was about 6-inches wide by 7-inches long, and it fit perfectly in my Instant Pot Duo.

  • Preheat your grill for two zone cooking with one side medium heat and the other side high heat.
